I made this corn chowder last night for the first time and it. was. amazing.
Here in Ohio it was -8 degrees yesterday so this steamy, hearty soup was just perfect for our cold little bellies!
Here is the recipe so that you too can devour this deliciousness!
1 lb boneless skinless chicken breast, cooked and shredded
8 slices bacon, cooked and crumbled
1/4 cup of butter
1 large red OR green bell pepper diced
1 medium yellow onion diced
4 cloves of garlic minced
1/3 cup all-purpose flour
6 cups chicken broth
3 medium russet potatoes
Salt and pepper to taste
2.5 cups fresh or frozen corn (I just used one 14.5 oz can)
1.5 cups half and half (or milk works too if you want a thinner soup)
Green onions chopped for garnish
1/3 - 1/2 bunch of cilantro (according to your taste)
1-2 jalapenos (seeded for less heat if desired) finely chopped
2 bay leaves
In a large pot melt the butter over medium heat. (Tip: Add it in evenly distributed tablespoon increments to avoid burning the butter)
Add the bell pepper, onion, jalapenos (optional), and saute until tender (about 3 minutes)
Add garlic and cook 30 seconds longer
Stir in flour and cook 2 minutes stirring constantly. While stirring, slowly add in the chicken broth and whisk until well blended
Add potatoes, bay leaves (optional), and season with salt and pepper to taste.
Bring the mixture to a boil stirring frequently. Then reduce the temperature to medium-low and cook, uncovered, for 10 minutes or just until potatoes are tender, stirring occasionally.
Add in cooked, shredded chicken, corn, cilantro, and half and half (or milk) and simmer uncovered for 10-15 minutes longer stirring occasionally.
Serve warm topped with bacon, green onions, and jalapenos (optional)
