I've been following along with Emily Meyers' blog, The Freckled Fox, for a few years now and I've always admired her. She's a fantastic mother to her 5 little ones, all under the age of 6 mind you, and a loving, devoted wife to her husband Martin.
About a year ago Emily came out with a post on her blog letting everyone know that Martin had been diagnosed with stage 4 melanoma. You can read her post about it HERE. So I don't know about you but I struggle with balancing having two under two. Emily and Martin have 5 under 6. And he has stage 4 melanoma. I can't imagine having my little ones and I wondering what the future might bring without my husband and their father. The more updates I hear from Emily on her blog and on her Instagram (@thefreckledfox) the more my heart aches. I just can't fathom it. She's always so strong and so positive. I hope we can help them.
They've been traveling back and forth from Idaho to Mexico and also to Texas for treatment. Martin is not working because he's in so much pain from the growing tumor in his liver so their only income is Emily's blog. But here's the catch, because Martin is in so much pain, Emily spends all her time either taking care of the kids or tending to him instead of blogging too much. I don't really know how she has a free second to lift a piece of toast to her mouth but she gets the job done and manages to keep all of her followers in the loop too.

This is one of my favorites for sure. I found this on Pinterest awhile ago from Damn Delicious and I can't. stop. making. it. Haha! It's so yummy. I will admit though, I have a ton of dried basil in my spice cabinet so I just use a handful of that instead of buying it fresh to save money. Either way works! Just do whatever your prefer.

We just had this one last night for dinner and oh man was my stomach happy about that! It's a staple in our house. It's also extremely easy to increase or decrease the amount based on your family size. The fact that it's much easier to prepare than it looks is also a huge win in my book! Easy dinner = happy Mama. Can you say CARBS? Haha! But potatoes are really good for blood pressure if you don't add a ton of salt so...that counts as healthy right?! ; ) I love these potatoes and they go great as a side dish with the garlic parmesan chicken and veggies! Potatoes are also pretty cheap so you can make this, impress guests, and no one will know it was really cheap. I snagged this, again, from Damn Delicious. (I love that website!)

This meatless wonder is just about as healthy yet indulgent as they come. You could even throw some more mozarella cheese on this if you reeeeaalllly wanted to. Just' sayin. Charlotte has been watching Baby Einstein videos pretty much since she was born. In one of the videos she watches it shows kids how to say a lot of different things in different languages and she's repeating it all now! In this vlog, we also dealt some more with my stomach flu, and we drew ALL over the driveway with chalk. Tom also re-proposed to me as he does every so often. What a heart throb ; ) I love you, Tom!
